At Mello Bistro, we're more than just a restaurant; we're the embodiment of Chef Romulo's lifelong dream. With a culinary journey spanning 25 years, Chef Romulo honed his skills as the Executive Chef of a renowned Miami restaurant for two decades before finally deciding to pursue his passion and bring Mello Bistro to life. His self-taught expertise, particularly in Italian cuisine, is approached with innovation and flair.
Joining him in this culinary adventure is Chef Christopher, his son, who graduated from high school in 2014 and immediately followed in his father's footsteps by enrolling in the Culinary Institute of America. After earning his degree, Chef Christopher honed his craft by working alongside Michelin-starred chef Daniel Boulud for an impressive five years. It was Chef Christopher's encouragement that finally pushed Chef Romulo to chase his dream, and together, with their knowledge, experience, and unbridled passion, Mello Bistro was born.
